Fresh Crab Tagliatelle
Serves 4 Preaparation 10 mins Cooking 15 mins Calories 362 Fat 19g
340g dried tagliatelle
45ml (3tbsp) olive oil
2 cloves garlic, chopped
1 red chilli, deseeded and chopped
finely grated ring of 1 lemon
2 fresh dressed crabs, to give about 300g crabmeat
200ml single cream
15ml (1 tbsp) lemon juice
salt and black pepper
30ml (2 tbsp) chopped fresh parsley to garnish
- Cook the past according to the instructions on the packet, until tender but still firm to the bite, then drain
- Meanwhile, heat the oil in a large heavy-based frying pan and gently fry the garlic, chilli and lemon rind for 3-4 minutes, until softened but not browned. Add the crabmeat, cream and lemon juice, and simmer for 1-2 minutes to heat through. Season to taste
- Transfer the pasta to serving bowls. Spoon the crab mixture over the top and sprinkle with parsley to garnish.
Note: This recipe really makes the most of fresh crab's fantastic flavour.
