Serves 4    Preaparation 10 mins     Cooking 15 mins     Calories 362      Fat 19g

340g dried tagliatelle
45ml (3tbsp) olive oil
2 cloves garlic, chopped
1 red chilli, deseeded and chopped
finely grated ring of 1 lemon
2 fresh dressed crabs, to give about 300g crabmeat
200ml single cream
15ml (1 tbsp) lemon juice
salt and black pepper
30ml (2 tbsp) chopped fresh parsley to garnish

  1. Cook the past according to the instructions on the packet, until tender but still firm to the bite, then drain
  2. Meanwhile, heat the oil in a large heavy-based frying pan and gently fry the garlic, chilli and lemon rind for 3-4 minutes, until softened but not browned. Add the crabmeat, cream and lemon juice, and simmer for 1-2 minutes to heat through. Season to taste
  3. Transfer the pasta to serving bowls. Spoon the crab mixture over the top and sprinkle with parsley to garnish.

Note: This recipe really makes the most of fresh crab's fantastic flavour.
